What to expect? Daniel Bouju has his own style of cognac. Their cognac matures in very heavily toasted barrels (bousinage), which also provides very specific aromas. Just think of toasted bread, currant bread, dry raisins, apricot, freshly brewed coffee, figs & tobacco. Nicely balanced and extremely complex.

The cognac house of Daniel Bouju is a family run cognachouse located in the village of Saint Preuil in the Charente In the most beautiful landscape of the entire cognac-region. They have 30 hectares of vines in the heart of the famed Grande Champagne region. Cognac Daniel Bouju has a wine making history that stretches back to the 19th century (1805). Enjoyed in countries around the world, this independent cognac label concentrates on producing a diverse range of artisan cognacs. François Bouju continues this long-standing tradition. With an eye for quality and their own techniques, they passionately know how to reach many enthusiasts. We are also big fans!

A brand new one so I haven't found much online at time of writing, but what I know, when we try our own eaux-de-vie that we're making with friends every year since the early 1990s, is that when we say 'le brûlé' that would refer to a batch that's been a little overcooked in a still 'that went too hot'. And yet you could have good surprises a few decades later… Colour: LOL, le brûlé could also refer to the colour, this is like coffee. Nose: no 'burnt' notes, rather lovely clean molasses, really a lot of chocolate by all the best makers in the world, a large pack of dried dates, and some soy sauce, Maggi, gravies, onion soup and whatnot. With water: it adores water and just takes off. Say peonies and chocolate. What an awesome combination on the nose. Mouth (neat): it happens that beginners would claim that all cognacs are the same (same with whisky by the way, just ask my dear wife), but this beautiful rich concoction that's full of chocolate and tobacco will just prove the contrary. Notes of tamarind, wee black figs, Russian (I know) black tea… With water: oh, subtle earths, coffees, chocolates… Finish: medium and never too dry, despite all this coffee and chocolate. A touch of Nutella in the aftertaste (you're fired!) Comments: totally fond of this. They'd forgive you if you said this was a 1950s/1960s Longmorn or Strathisla by G&M.

The brand-new bottling from Malternative Belgium is their first release from the house of Daniel Bouju. In fact this was also one of the first estates that was discovered by whisky lovers, years ago and one of the few that had cask strength expressions at that time.
It is a family producer in the heart of the Grande Champagne region, who started in 1805. They own around 15 ha of vineyards in the area, they make their own spirit and control all other steps. In fact Pieter explained how Bouju works with a special bousinage, a toasting of the casks that caramelises the wood and gives it an extra boost. Then after some years the spirit is moved from these heavily toasted casks to older, less active barrels.
Nose: deep and flavoursome, with a clear hint of Caribbean rum. A good dose of Demerara sugar, tobacco leaves and cigar boxes. Lightly charred oak. Over-infused Earl Grey tea. Over time it shows a growing spiciness (nutmeg, clove, cinnamon) as well as an oxidative rancio side and leather. A wee sour edge of the wood too.
Mouth: rich, always with this undertone of brown sugar and molasses, alongside figs and prune jam. Then it goes to liquorice and tobacco, with leather and a few drops of Fernet Branca. A dark and herbal style, showing medicinal notes and burnt cake but also a faint floral edge. Quite woody, sure, but not overly tannic as the underlying caramelly sweetness keeps it in check.
Finish: quite long, chalky and mineral, with plenty of salty notes.
This Daniel Boujou steers more towards oxidative notes and typical rancio, with a good dose of woody notes. A very concentrated and bold style, not uncommon for this house, and almost the equivalent of a good PX sherry cask in whisky. Today’s cognac bottlers may not have ventured into this corner of the cognac spectrum before, so it’s yet another excellent find.
