About the producer:
This Cognac was distilled in Foussignac in '75. The municipality of Foussignac is located in the Fins Bois appellation. The 29 hectares of vineyards of this cognac house are located between Foussignac and Triac/Roissac, which is just on the border with the Grande Champagne appellation. The location, and therefore the terroir, of these vineyards ensures that these cognacs can be considered very aromatic and belong to the top of this cru. The vineyards were planted in the 1960s. It was Mrs. Foucher's father who started the cultivation and distillation, Marie took over in 1980.

We met Marie Foucher in the summer of 2023. At 42° degrees it was one of the hottest days of 2023, you would think that this is not ideal weather for tasting cognac. Nothing could be further from the truth! Marie took us on a journey through the history of her cognacs. With lots of great stories and anecdotes, we were able to return home satisfied with new experiences. In addition to cognac, Marie is also passionate about travelling & art. So plenty to talk about. Her typical Charentaise house breathes history and craftsmanship, the cognac cellars are a proof that time and patience are a virtue.

This single cask is our second selection from the cellars of Mrs. Foucher.

Tasting notes:
Nose: On the first nosing, this cognac opens with an impressive aroma of ripe dried fruits: dates, prunes, and apricots. Subtle notes of dark honey and salted caramel blend seamlessly with the warmth of cinnamon. As it opens up further, even more complexity is revealed.
Taste: The initial sip is silky smooth, with a rich, oily texture that envelops the palate. Flavors of stewed apples and pears emerge, followed by rich notes of walnut, marzipan, and a touch of dark chocolate. The influence of the oak is beautifully integrated, with accents of spices like cinnamon, clove, and a subtle hint of black pepper. Candied citrus adds an extra dimension. It continues to evolve beautifully, becoming fuller and more expressive—a truly aromatic top Fins Bois!
Finish: The finish is long and layered. A pleasant dryness of aged oak is perfectly balanced by sweeter accents of toffee and dates. A faint hint of smokiness (fumé) and roasted almonds lingers, accompanied by a refined floral touch and an abundance of mint, creating a refreshing and elegant conclusion.

Label explanation:
The artwork on the label is inspired by one of the beautiful postcards we received from Marie Foucher. Marie prefers communicating through letters or postcards rather than email, something we deeply enjoy. In May 2024, Marie traveled to Uzbekistan, where she visited the historic city of Samarkand—the jewel of the Silk Road, renowned for its impressive monuments adorned with stunning blue ceramics. She excitedly shared with us how, even there, in a local restaurant, French cognac was being served!
The illustration on the label depicts a traveling lady, lost in the enchantment of this blue city. She is accompanied by a robin, a symbol that holds special meaning for us, as it always greeted us during our visits to Marie.

This takes us to the village of Foussignac. On the Malternative Belgium website, you’ll find the stories behind each bottling and each character, often quite moving and reminiscent of Grosperrin’s style. After all, great spirits are largely about great characters. Colour: deep gold. Nose: initially a touch shy, but the fruits slowly rise to the surface—yellow peaches, honey, sultanas, and ripe bananas. You can tell water will work wonders here; in my opinion, Cognac seems to react about 10% less than malt to dilution. By which I mean that a 50% Cognac feels akin to a 60% malt—a purely personal observation. With water: damp leaves, roasted chestnuts, lanolin, sesame oil, and even shoe polish. Another little enchantment. Mouth (neat): forget it, it’s perfect. Astonishingly fruity, partially exotic, with figs galore—figs, figs, and more figs. With water: peaches, apples, and pears burst forward like Mbappé charging into the box. Looks like a goal is inevitable. Finish: not eternal, but who cares? The arrival of liquorice and powerful honey wraps it all up beautifully. Comments: what can I say? This is perfect. Once again, beware the dangerously high drinkability index. You might want to ask your better half to hide the bottle.

Bien le bonjour les gens ! Aujourd’hui, je vous propose la dégustation du nouvel embouteillage des copains de chez Malternative en Belgique, cette fois-ci nous voyageons chez Marie Foucher, à Foussignac. Appellation Fin Bois, du « millésime » 1975 et limité à 324 bouteilles.
Voici le cognac Marie Foucher 1975 Fins Bois, un spiritueux distingué distillé en 1975 à Foussignac, au sein de l’appellation Fins Bois. Ce cognac est élaboré à partir de raisins d’ugni blanc récoltés dans le vignoble de 29 hectares situé entre Foussignac et Triac/Roissac, près de la frontière de la Grande Champagne. Ce terroir unique apporte une richesse aromatique qui place ce cognac parmi les meilleurs de son cru. Le vignoble, créé dans les années 1960 par le père de Marie Foucher, est géré par cette dernière depuis 1980.
La bouteille porte une étiquette inspirée d’une carte postale de Marie Foucher, reflétant sa passion pour les voyages et l’art. L’illustration représente une dame explorant la ville historique de Samarkand, symbolisant les aventures de Marie et la riche histoire du cognac. Un rouge-gorge accompagne la voyageuse, clin d’œil à l’oiseau qui accueillait les visiteurs lors de leurs visites au domaine de Marie.
Nez
Relativement pâtiné et brioché, ce nez présente pas mal de notes fruitées avec les fruits à chaire jaune, l’abricot, la mirabelle, les dattes, les agrumes en confiture rendus bien gourmands par un beau nappage au miel. Cela lui donne un côté relativement sirupeux en fait, c’est vraiment très gras et concentré.
Le boisé est là aussi bien entendu, mais relativement fondu avec le chocolat au lait, quelques fruits à coques, le bois laqué et la cire d’abeille.
Sur la fin, quelques notes légèrement plus acides avec le citron jaune confit, les ruits rouges et un voile mentholé du meilleur effet.
Bouche
Bouche avec un beau kick fruité où l’on va retrouver pas mal de fruits tirant plus vers l’exotisme avec la mangue, les fruits de la passion, les agrumes couplés à quelques fruits plus « européens » tels que les poires, pommes et autres abricots.
Le boisé est présent, avec le thé noir, la réglisse, le chocolat noir amère, le tabac et la poudre de chocolat intense.
La bouche est plus vive que ce que le nez ne laissait présager, du coup c’est très agréable et évite de tomber dans des excès qui pourraient mener à l’écoeurement.
Conclusion
Nez très chargé, sirupeux pour une bouche plus « explosive », ce Cognac est une très belle réussite !

Nose: slightly robust, but showing deep fruity notes. Mirabelles, dates and apricots, as well as some dried pear and quince jam. Some currants too. The initial impression is really jammy and rich, with a light hint of croissants underneath, but there’s also a great minty layer. Herbal honeys, orange blossom and some polished wood give it plenty of freshness and liven it up. Then a bit of almond and peanuts in the end.
Mouth: spricots and tangerines, as well as stewed pear and a hint of dried mango. Plenty of candied citrus peels. Mid-palate the freshness overtakes the jammy character. Minty notes with hints of elderflower and cinammon. Then a subtle hint of tobacco, along with a bit of black tea and herbal honey. Walnuts and clove oil. Very complete.
Finish: long, still nicely citrusy and bright. Oranges with hints of toasted oak, as well as some dates.
Very much in line with how I remember the Lot 77. Rich and jammy fruits, with just enough mint and oaky freshness.
